I have no idea why, but this Cherry Pistachio Naked Cake was kind of inspired by my love of the Royal Family! An easy layer cake that starts with a cake mix, but ends as a decadent dessert that looks as good as it tastes.
1French Vanilla boxed cake mix plus ingredients to prepare
1 ½cupsfresh sweet cherries
½cupshelled pistachio nutschopped
2cupswhipping cream
2envelopes Whip Itwhip cream stabilizer
5tablespoonsconfectioners sugar
Instructions
Prepare cake mix according to package directions using 2 - 8 inch round cake pans, bake and set aside to cool completely
Meanwhile chop cherries into small pieces, reserving a few for decoration. Rough chop pistachios, reserving some for decoration.
In the bowl of an electric mixer add the whipping cream, Whip It, and confectioners sugar; whip just until stiff peaks form. Do not over whip.
Gently fold cherries and pistachios into the prepared whipped cream
When cake is completely cool, cut each layer in half horizontally. Using spatula add a generous layer of whipped cream mixture to bottom cake layer, spreading just to edges. Carefully top with next layer of cake, another layer of whipped cream mixture, repeating until all four layers are added, ending with a large dollop of whipped cream on the top. Spread topping within an inch or so of the edges and sprinkle with reserved cherries and pistachio pieces.
Notes
Store leftovers in an airtight container or covered cake plate in the refrigerator for up to 2 days.
