Pumpkin Spice Dip
If your family is anything like mine, when fall really starts to set in we kind of go in to a little bit of hibernation mode. The long busy days of summer are behind us and as the days get shorter, I just want to have dinner, walk the dog and get in my jammies.
All our favourite shows are finally in new episodes and Hockey Night in Canada takes over the television on Saturday nights. Playing a game of Yatzee or two is sometimes on the agenda. It also means we tend to treat ourselves to a few more “treat nights” than we probably should.
Chips and dip become a little bit too routine. And, while I would like to blame it all on Tim and the kids, they don’t have to twist my arm. I have been known to through a few too many treats in the cart at the grocery store.
I have found a solution that lets us continue to enjoy a treat while watching the game (or playing a game), and helps keep the waist line in check! Plus it speaks to Tim’s love of crunchy snacks and my vote for something sweet.
Pumpkin Spice Dip with Cinnamon Chips!
I start with one 4 pack sleeve of Nordica Smooth Cottage Cheese Vanilla Bean flavour by Gay Lea. Transfer the cottage cheese to a small mixing bowl. Add 1 teaspoon of pumpkin pie spice and stir until well blended.
Transfer to a serving bowl, or if you want to get a little fancy, carve out some mini pumpkins and spoon a few tablespoons in each one. Delicious and cute.
For a healthy alternative to chips that are lightly sweet and pair perfectly with the pumpkin spice dip, simply brush 6 or 7 small tortillas with butter. Sprinkle with cinnamon and a bit of sugar, arrange on a cookie sheet and bake at 350 for 10 minutes.
Serve them along side the pumpkin spice dip and enjoy your new favourite snack.
