Impossible Pumpkin Pie
Today is the final day of Pumpkin Week! It has been a fun week with so many delicious recipes to try! Today’s recipe is one I found when combing through my mom’s recipes earlier this summer.
Impossible Pumpkin Pie!
Not only is it impossibly easy, it is also impossibly delicious! Everything is mixed together in one bowl, poured into a pie plate and baked. That’s it!
I can’t say I ever recall my mom making this recipe, but truth be told, I didn’t like pumpkin desserts when I was younger. It probably wasn’t until I was in my 20’s before I realized pumpkin pie actually was really good.
Now I don’t even wait until autumn to bake with pumpkin. I make these pumpkin cheesecakes in a jar all year round! They are light, not too sweet, and no-bake!
I wasn’t really sure how this recipe was going to turn out. It does have Bisquick biscuit mix in it, but it is crustless. Pure pumpkin pie in every bite!
I topped this one with coconut whipped cream and a sprinkle of sugar and cinnamon.

Impossible Pumpkin Pie
An easy one bowl pumpkin pie
Ingredients
- 3/4 cup granulated sugar
- 1/2 cup Bisquick biscuit mix
- 2 tablespoons butter, softened
- 1 can evaporated milk
- 2 eggs
- 2 cups pure pumpkin puree
- 2 1/2 teaspoons pumpkin pie spice
- 2 teaspoons vanilla
Instructions
- Preheat oven to 350 degrees. Spray 9 or 10 inch pie plate with non-stick cooking spray.
- Add all ingredients to a large mixing bowl and beat until smooth.
- Pour into prepared pie plate and bake for 50 minutes.
