Ginger Spice Cookies
I am wrapping up Christmas cookie week with a personal favorite recipe today. These Ginger Spice cookies are what I think should be the official flavour of Christmas!

These ginger spice cookies are soft and chewy, and full of all those yummy spices we associate with the holidays.
Isn’t funny how our tastes change over the years. As a child, whenever I was presented with a cookie tray I would always choose the most colorful, festive looking cookie. Like these empire cookies or sweet Marie bars.


While I still love all those holiday favorites, these chewy ginger cookies are what I pick first. Okay, maybe second behind the cherry chews!
It is hard not to feel in the holiday spirit when you bake up a batch of these cookies. As soon as the batter comes together, with the ginger, cinnamon and hint of nutmeg it smells like Christmas.

I wish I could bottle the scent of them baking in the oven! But, that very first bite of a still warm ginger cookie will have you hooked!
While Christmas Cookie Week may be coming to a close, Christmas baking is just starting to heat up at our house. With so many delicious cookies shared this week, it is going to be hard to decide which ones to add to this years baking list.

Ginger Spice Cookies
Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- ½ teaspoon nutmeg
- ¼ teaspoon salt
- 1 large egg
- ¾ cup vegetable oil
- ¼ molasses
- 1 cup packed dark brown sugar
- ⅓ cup course granulated sugar
Instructions
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside. Arrange oven racks to top and bottom thirds.
- In a small bowl whisk together flour, baking soda, spices and salt. Set aside
- In a large mixing bowl beat egg with a whisk. Whisk in oil and molasses until well combined. Stir in brown sugar using a wooden spoon.
- Gradually add in flour mixture, stirring with a wooden spoon until well incorporated.
- Place course granulated sugar into a small shallow bowl. Using a tablespoon scoop out dough and roll into balls, rolling each one into sugar and place on cookie sheet, leaving 2 to 3 inches between to allow for spread.
- Bake in preheated oven for 7 to 10 minutes, until edges begin to crackle and set.
- Remove from oven and allow cookies to cool on the cookie sheets.
