Easy Cherry Drop Cookies

These easy cherry cookies are like a blast from the past! An old fashioned drop cookie with a delicious buttery flavour and the sweetness of red and green candied cherries.

I think some of the best cookies are the tried and true recipes from years gone by. These cherry drop cookies are exactly that. A light and fluffy, chewy cookie made with just a few simple ingredients and just one bowl!

Ingredients You Will Need

  • butter
  • brown sugar
  • egg
  • vanilla extract
  • baking soda
  • baking powder
  • red and green candied cherries
  • all purpose flour
  • chopped walnuts (optional)

How to Make Cherry Drop Cookies

In bowl of stand mixer cream the brown sugar and butter for 2 to 3 minutes. Add egg and mix until well combined.

Add red and green candied cherries and mix until combined.

Sift in dry ingredients, mix on low just until all flour is incorporated. Drop by heading tablespoon fulls onto parchment on Silpat lined baking sheets. Bake for 10-12 minutes.

These cookies are perfect for dunking into a cold glass of milk! Also perfect for leaving out for Santa on Christmas Eve 😉

Good to know

While butter provides a nice flavour profile, you can use vegetable shortening instead. The cookies will not spread as much and be slightly fluffier than those made with butter. I use butter, and don’t press the dough down after it is dropped onto the baking sheet and my cookies are perfectly fluffy and chewy.

Use room temperature ingredients for best results. Butter should be firm, but leave a dent when pressed with your finger.

Measure flour accurately by spooning into dry measuring cup and levelling with the back of a knife.

Use a stand mixer or mix in a large mixing bowl with a hand mixer.

They freeze well sealed in an airtight container, so you can make them up to 2 months before the holidays and keep them frozen until ready to eat.

But, don’t save them just for the holidays! These delicious cookies make a nice treat any time of year.

These delicious cherry drop cookies are light and chewy. Red and green candied cherries in a butter cookie batter make these cherry cookies the perfect addition to your holiday cookie tray.

Ingredients

  • 3/4 cup butter, room temperature
  • 1 cup lightly packed brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup each red and green candied (glacé) cherries cut in half
  • 2 cups all purpose flour
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Line baking sheets with parchment or Silpat baking mat. Preheat oven to 350 degrees.
  2. In the bowl of electric mixer beat butter and brown sugar until light and fluffy. About 2 minutes.
  3. Add egg and vanilla and mix until well blended.
  4. Add cherries and mix on low until combined.
  5. Sift flour, baking soda and baking powder into cherry mixture and beat on low just until combined. Stir in nuts if using.
  6. Drop by heaping tablespoons full onto prepared baking sheets, leaving room for cookies to expand. Bake for 11-13 mintues, just until edges are golden and cookies are set, but still soft.
  7. Remove from oven and leave on cookie sheet for 5 minutes before transferring to a cooling rack to cool completely.

Notes

You can also make cookie batter in a large bowl using a hand mixer, following the same steps as above.

Store in an air tight container at room temperature for up to 4 days, or freeze for up to 4 months.
