Cream butter and sugar, add eggs and beat until combined. Combine flour, baking powder and salt, and add to butter mixture along with the milk. Mix just until combined.
Stir in chocolate chips and cherries. Bake at 425 for 5 minutes, and then without opening oven door, reduce heat to 350 degrees and bake for an additional 17-20 minutes, until toothpick comes out clean.
Tips
- Take eggs and milk out of the refrigerator about an hour before baking to bring them to room temperature
- Be sure to use softened butter, I usually remove mine from the refrigerator several hours before
- Don’t over mix the batter, stir just until no streaks of flour remain and then fold in chocolate chips and cherries
- Completely cool muffins before storing them in an airtight container to avoid soggy or sticky muffins
- Sprinkle the muffins generously with course sugar before baking or drizzle with a mixture of milk and confectioners sugar once they are cooled
Are glacé cherries and maraschino cherries the same?
No. While both are made with real cherries, glacé cherries are cooked in sugar, created a sweet candied cherry. Maraschino cherries are soaked in a brine solution to preserve, and red dye is added to a sugar sugar solution to create a bright red colour. I have not tested this recipe using maraschino cherries, but I did use them in these banana split muffins ,so I do believe they would work just fine.
Where can I buy glacé cherries
Glacé cherries can be found in most grocery stores in the baking aisle. They generally come in a clear plastic tub. I buy mine at a local bulk food store from the dried fruit section. Buying this way makes it easy to buy the exact amount I need for my recipe.
These easy cherry drop cookies are a favourite Christmas cookie made with glacé cherries. These chocolate cherry snowballs are another holiday favourite, but equally the perfect cookie for Valentine’s Day!
How to store muffins
Make sure the muffins are COMPLETELY COOL before storing. Store in an airtight container lined with a paper towel to help absorb any excess moisture. If you are layering muffins in a container, place an additional piece of paper towel between the layers. Store at room temperature for 2 days, in the refrigerator for up to 4 days or freeze for up to 2 months.
