Butter Pecan Blondies

These chewy butter pecan blondies start with a cake mix and take less than 10 minutes to prepare, but no-one will ever guess! Slightly crispy on the outside, tender and moist on the inside.

Bar recipes are one of my favourite things to make, and these are no exception.  They whip up quickly by hand with just a couple of ingredients. These raspberry jam bars are another favourite bar recipe I think you’ll like!

Ingredients You Will Need

  • Butter Pecan cake mix
  • brown sugar
  • butter
  • pecans
  • butterscotch chips
  • eggs

How to Make Butter Pecan Blondies

  • Gather your ingredients
  • In a large mixing bowl, blend brown sugar with cake mix, add eggs and stir to combine
  • Add butterscotch chips and chopped pecans and stir until well blended
  • Transfer batter to a parchment lined baking pan and spread evenly with an offset spatula
  • Bake at 350 degrees for 23 to 28 minutes

The edges will be golden brown and a toothpick inserted into the centre should come out clean or with a few crumbs.

The butter and brown sugar combine with the cake mix to give these butter pecan blondies a delicious nutty, caramelized flavour.

Chopped pecans add a nice nutty crunch, while the butterscotch chips melt into a delicious puddle of sweetness in every bite!

How to Store

Allow to cool completely before cutting into squares. Store in an airtight container at room temperature for up to 4 days.

These also freeze well. Simply wrap snuggly in plastic wrap, place them in an airtight container and freeze for up to 2 months.

How to Serve Butter Pecan Bars

Cut them into large squares for dessert size serving or into smaller squares for treat size bars. Dust with powdered sugar.

Pack them in lunches or enjoy with a cup of coffee or tea as an afternoon snack.

If you are serving for dessert, drizzle with caramel sauce just before serving for an extra-special treat!

Butter Pecan Blondies

Yield: 16 large or 32 small squares
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

These butter pecan blondies are soft, chewy bars that taste like a sweet, buttery cookie. They start with a cake mix, and brown sugar and melted butter give them a rich, caramel flavour. Chopped pecans give a crunchy texture and butterscotch chips add a smooth sweetness.

Ingredients

  • Boxed Butter Pecan Cake Mix
  • 1/2 cup packed dark brown sugar
  • 1/2 cup butter, melted
  • 2 large eggs at room temperature
  • 1/2 cup finally chopped pecans
  • 1/2 cup butterscotch chips

Instructions

  1. Preheat oven to 350 degrees. Line a 9 by 13 cake pan with parchment or spray with non-stick spray, and set aside.
  2. In a large mixing bowl whisk together cake mix and brown sugar. Add melted butter and eggs and mix using a spatula or large wooden spoon until well blended and smooth.
  3. Add chopped pecans and butterscotch and mix well to combine.
  4. Transfer mixture to the prepared baking pan and using an offset spatula spread the batter evenly into the pan.
  5. Bake for 23 to 28 minutes, until edges are golden and toothpick comes out clean. Transfer to cooling rack to cook completely.
  6. Cut into squares and dust with confectioners sugar.

Notes

Can be cut into 16 large squares for dessert or 32 smaller snack size squares.

Store in an airtight container at room temperature for up to 4 days, or freeze for up to 2 months.
