Strawberry Shortcake
Today I will keep it “short and sweet”! A short post about a sweet treat – Strawberry Shortcake!
This is just one more reason that I love strawberry season.
After all, what would strawberry season be with out homemade biscuits covered in juicy, sweetened berries, smothered in fresh whipping cream, and drizzled with a bit of strawberry syrup!
My biscuit recipe can be found here, just omit the cheese! Add 1/3 cup sugar to 1 quart hulled and sliced strawberries and let sit for about an hour. Meanwhile, whip 1 cup heavy cream with 3 tbsp sugar until soft peaks form and chill until berries are ready.
To assemble, cut biscuits in half horizontally. Spoon on a generous amount of berries and some of the juices over bottom half. Top with whipped cream and a few more berries if you wish. Place the top half of biscuit over this and drizzle with a bit of strawberry syrup or juices from the strawberries.
Enjoy!
Stop by the Red Cottage for more strawberry goodness tomorrow!
